Food for Thought; Risotto

Risotto is hands down one of my favourite dinners.   The husband hates it but the mother has been visiting and she doesn’t complain at what she gets fed, plus she brought the wine I needed to add, so risotto it is!
The thing I love about risotto is how versatile it is, once you have the basics down you can add pretty much anything and it will turn out delicious!  So today I am sharing what I cooked tonight, which was a chicken, sweet potato and veggie option…..the sweet potato being a legacy from the marathon training and one which I am not 100% sure worked but I still managed to eat 2 platefuls….hey I’m still pregnant so all is good!! 

Roasted Veg and Chicken Risotto

Ingredients

Serves 2 adults (one starving and pregnant) plus 2 toddler portions

A mugful of risotto rice
Now it irritates me when recipes give a cup of this, or 1/4 of that.  This is what I mean by a mugful of risotto rice:
One clove garlic, finely chopped
2 onions
I used red onion but I think the equivilant in shallots would be nicer
Handful chopped mushrooms
2 chicken breasts, chopped and cooked
2 small peppers, any colour, roasted
1 small sweet potato, peeled. cubed and roasted
1 small glass of white wine
1 and a half pints of chicken stock
1 tbsp olive oil
Big dollop butter

How to do it:

1. Saute the garlic for 2 minutes, in the oil and butter mix

2. Add the onion and saute until opaque (about 5 mins)


3. Add the mugful of risotto rice and stir

4. Saute the rice for about 5 minutes until it become opaque                       
5. Add the wine, a dribble at a time until all absorbed, stirring all the time
6. Once all the wine is gone (and maybe sneak a mouthful or 2!) add the stock, a ladle at a time, continue stirring all the time.  This takes about half an hour!!
(did I not warn you how labourious this was?!)

7. Once all the liquid is absorbed, add the roasted vegetables and chicken, stir well
8. Add a big handful of cheese 
This is my interpretation of a handful of cheese!

9. Stir until all cheese melted and then serve!

Delicious, and seeing as my mum also brought my other love of part baked baguette we indulged with that as well!
