Meal Plan #4

After my lovely easy meal planning with DinnerTime it is unfortunately back on me to concoct this weeks meal plan.  As always this is actually what we ate last week, but you guys get the idea.

Being ever closer to my due date I did attempt to bust out the slow cooker and doubling up quantities so we have some freezer meals ready for when I am out of the hospital.  I love the husband to pieces but cooking isn’t his strong point and we would be living on a diet of pasta bake, baked potatoes and possibly take away every night…..it kind of worked but not really, there is always this week.

Monday; Philly Salmon and Rice

This is probably our go to meal when we want to be “healthy”.  Salmon fillet, spoonful of philly cheese, breadcrumbs.  Sorted. 
I even took a picture last time we had it so you could see what I mean!

Tuesday; Slow Cooker Creamy Tarragon Chicken with crushed potatoes and peas

After the success from the Creamy Basil Chicken I went searching in my slow cooker book and found this little recipe.  Though it looks decadent with the cream added the actual amount added is minimal so I feel as though it is semi healthy.
I will be posting this recipe soon I promise.

Wednesday; Tuna Steak Salad and boiled potatoes

Tuna steak marinaded for 30 minutes in lime, chilli flakes, honey and soy sauce before frying in the griddle pan.
Served with fresh salad and boiled potatoes, and of course a gorgeous garlicky olive oil based salad dressing:
1 clove garlic crushed
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp mustard
1 tsp honey
Salt and Pepper
Delicious when mopped up with crusty loaf, I will go as far as to say this is my favourite part of the meal!!

Thursday; Honey Spice Glazed Chicken with Rice and Salad

Thursday night, no takeaway treat?!  Ahh but you will see why on Friday.

I scoured Pinterest and found this recipe to try out as a break from the normal.  I replaced the chicken thighs with chicken breasts and it went down a treat.  A little more inspiring than normal roasted chicken.

Friday; Barbeque

Call us crazy but we had a house warming/leaving party over the weekend.  So Friday was filled with burgers, sausages, chicken kebabs, potato salad, salad, coleslaw…..delicious.

My fail safe potato salad recipe:

Cubed, cooled, boiled salad potatoes
1-2 red onions chopped

Mix with a massive dollop of mayonnaise and serve.

Saturday; Lamb tagine

Sunday; Steak Pie and Mash

Sometimes it just has to be done, good old English staples!
