Food for Thought; Grilled Lime Fish Kebabs with Kale Salad

Today I am sharing the second of the meals we had when DinnerTime delivered their weekly box to me, as I posted about in Meal Plan #3.

And that meal was Fish Kebabs – I was so excited to try making these as I had never cooked with Perch before, but now I know how simple and tasty it is I will definitely be giving it another go.  Not sure why fish is so scary to me, but it is, and DinnerTime took that fear away with this simple recipe.

The Recipe

Serves 2

Ingredients

4-8 Wooden Skewers (I didn’t actually manage to find any so did without)
2 servings of rice of choice
300g white fish (Nile Perch was provided)
1 clove garlic, crushed
2 large limes, cut into wedges
1 tsp ground cumin
1/2 bunch fresh coriander leaves
Olive oil
1/2 bunch kale, chopped
1/2 lemon, juiced
1 handful walnuts
30g Parmesan, grated

How to do it

  1. If using, soak the wooden skewers in water
  2. Put the rice on to cook
  3. Cut the fish into chunks
  4. Crush the garlic, slice the lime into wedges
  5. Season the fish with the garlic, cumin and coriander in a bowl (I added a squeeze of lime here as I didn’t have any skewers)
  6. Beginning and ending with fish thread the fish and lime wedges onto the skewers
  7. Chop the kale
  8. Drizzle with lemon juice and season with salt.  Massage until kale releases water, discard the water.
  9. Heat a griddle pan and fry the fish until golden on both sides

  10. Meanwhile, roughly chop the walnuts and grate the Parmesan
  11. Toast the walnuts in a dry pan until golden brown
  12. Add walnuts and Parmesan to the kale, toss, voila kale salad

  13. Serve the skewers with rice and the kale salad on the side

The Verdict

Once again, a pretty perfect meal.  The fish was moist and tender, the kale salad was delicious with the addition of salty Parmesan and the toasted walnuts are quite possibly my new favourite thing, EVER.
On top of that, no word of a lie, the meal was ready within 30 minutes.
So one to add to my meal planning repertoire and I no longer need to be scared of Perch.
