Food for Thought; Pan Grilled Chicken with Basil Cream Sauce and Roast Cherry Tomatoes

So as you may have seen in my third meal plan I had a little help from DinnerTime out here in the UAE.  And for those of you who haven’t seen yet pop back over and look as I am running a fantastic giveaway in conjunction with them!

With the review, I am also able to share the four recipes that I had tried and tasted, with my own pictures to show how I fared…..

The recipes will be appear over the course of the coming weeks, interspaced with a few baking adventures I’ve had with the toddler along the way.

First up is what we ate the first night, pan grilled chicken with basil cream sauce.  

The Recipe

Serves 2

Ingredients

450g potatoes, peeled and cut into wedges
Salt and Pepper 
125g cherry tomatoes
Olive oil
400g Chicken Breasts
1/2 bunch Kale, chopped
1/2 Lemon, juiced
200ml fresh cream
2 tbsp butter (optional)
1 handful fresh basil, torn
nb. all items that are bolded are provided as part of the DinnerTime food box


How to do it:

  1. Pre-heat oven to 200
  2. Peel and cut the potatoes into wedges, boil until cooked, drain and crush.  Season to taste
  3. Meanwhile, place tomatoes on a tray, drizzle with oil and bake for 10 minutes (or so) until soft.  Remove from oven
  4. Heat a grill pan on high heat until hot, rub chicken with oil and season.  Place in the pan serving side down and cook for 3-4 minutes until side is deep golden.
  5. Flip chicken, reduce heat and cook another 10 minutes until cooked through OR simply flip chicken and transfer pan to the oven for the remaining 10 minutes.
  6. Chop the kale, squeeze over the lemon juice, and massage/knead until kale releases water.  Discard water and put kale to one side
  7. Make the sauce, heat the cream to boiling then reduce the heat.  Simmer for 5 minutes until sauce thickens then remove from heat whisk the butter in if using, squeeze in the lemon juice
  8. Tear the basil and add it to the cream
  9. Serve the chicken with the sauce, potatoes and kale as your “crunch”

Verdict

I loved this!  And so did the husband.  I am always wary of creamy sauces as I don’t think they ever seem to work for me but this one did and it was really simple!  Again, basil not an ingredient I would normally use but I am loving my little plant pot of basil by the side of my cooker and I am considering attempting to grow some.  Without DinnerTime I would have overlooked this completely.
Oh and yes, I am a sauce fiend……mopped up with a slice of crusty bread.  Delicious!
