Healthy Turkey Curry
A great way of using up those delicious roasted turkey leftovers, packed full of flavour a novel twist on the standard turkey curry served up after big family occasions.

Ingredients

red onions
sliced

root ginger
grated

clove
garlic

red pepper

chicken stock
300
ml
coconut milk

coconut oil

tbsp
curry powder

tbsp
paprika

tbsp
tumeric

leftover roasted turkey
chopped
Instructions
Add coconut oil to a frying pan, fry off onion, ginger, garlic and pepper until onion is translucent
Add spices and fry for 1 minute
Add stock gradually
Stir through coconut milk and bring to the boil
Leave to simmer for 10 minutes
Add leftover turkey and heat through
Serve immediately
