What do you do when you have a sick Baby, a bored 3 year old and some over ripe bananas? You head into the kitchen and get baking when said sick Baby is busy sleeping off being poorly. So off we popped to make banana bread, in cake form.
I love banana bread, it’s versatile, you can pack a lot of fruit into it to cut out the amount of processed sugar to make a sweet healthy treat. And you can follow my trick which is to make it cake shaped rather than bread shaped, which means it even feels like a naughty treat.
Generally I make cinnamon infused, raisin and nut filled banana bread but given that my big one had been so good being on house arrest with the Baby we decided to up our game and make chocolate banana bread – in cupcake form.
And they were good.
The Baby even managed to munch down at least 2, no mean feat battling tonsillitis when you don’t even want to swallow Calpol!
Rich, chocolate-y, banana goodness these cakes retain the moistness from the banana and have sweet melting hits of chocolate from the chocolate chips studded through the mixture. Gooey deliciousness!

- 2 ripe bananas
- 50 g salted butter melted
- 1 egg beaten
- 1 tsp baking powder
- 1 tbsp cocoa
- 150 g plain flour
- 50 g caster sugar
- 1 tsp vanilla extract
- 100 g milk chocolate chips
Ingredients

- Pre-heat oven to 160 degrees
- Mash banana
- Melt butter and add it to the mashed banana, mix well
- Add beaten egg and caster sugar, mix well
- Sieve plain flour, cocoa and baking powder into the banana mix, fold in gently
- Stir through chocolate chips
- Add approx. 2 tbsp of mixture to prepared cupcake cases
- Bake for 30 minutes until top springs back to the touch
- Cool and enjoy
