  1. Pre-heat oven to 160 degrees
  2. Mash banana
  3. Melt butter and add it to the mashed banana, mix well
  4. Add beaten egg and caster sugar, mix well
  5. Sieve plain flour, cocoa and baking powder into the banana mix, fold in gently
  6. Stir through chocolate chips
  7. Add approx. 2 tbsp of mixture to prepared cupcake cases
  8. Bake for 30 minutes until top springs back to the touch
  9. Cool and enjoy
