  1. Preheat oven to 150 degrees and line a baking tray with greaseproof paper
  2. Beat together eggs and sugar until light and fluffy
  3. Stir in coconut
  4. Leave mixture to stand for 20 minutes
  5. Shape mixture into small balls, about the size of a teaspoon, place on trays and flatten slightly
  6. Bake in oven for 12-15 minutes until golden brown turning halfway through. Cool on cooling rack.
