Do you ever get bored and find that you’re eating the same meals, on the same days each week? Every so often we realise this so of course then it’s a head to Pinterest job and away we go with something new. Every so often, I find, and tweak, a gem that makes it onto our rota!
Clean Eating Chicken Satay with Dipping Sauce
Ingredients
4 tbsp Natural Peanut Butter
3 tbsp Soy Sauce
3 tbsp Olive Oil
1 tbsp honey
2 cloves garlic, minced
1 onion, diced
2 tbsp fresh Coriander
200ml chicken stock
Big pinch chilli flakes
3-4 Chicken Breasts, diced
How to do it
1. Put all ingredients into blender, except the chicken, and whizz until smooth
2. Portion off a bowlful to use as dipping sauce
3. Add the chicken breast and the remaining marinade to a sealable bag. Leave in the fridge to marinade for 6 hours
4. Soak wooden skewers before threading chicken onto them
5. Place on a baking tray and bake on 200degrees for 20-25 minutes. Alternatively fry in a griddle pan until cooked
6. Serve with the sauce saved earlier
