This morning I headed out for a run after dropping my biggest one at school. Kind of a New Year’s resolution of mine (even though it’s more of a New Year, Same Me theme going on) when I walked back in the door to the Baby flinging himself at me in order to take me by the hand and lead me to wherever he wanted to go. I am raising a tiny dictator here!
And where he wanted to go happened to be the kitchen. Once in the kitchen he took down his apron from the door handle before tugging on the bottom of my apron which was hung on the back of the door. Yes, my 20 month old basically showed me he wanted to bake with me this morning. So bake we did, once I showered of course.
The big question was what to bake, my supplies are depleted due to it being so close to shopping day and I wasn’t sure whether I wanted to give up my secret mum nibbles of chocolate chips. It turns out puppy dog eyes and little dictator demanding won out and I adapted an old crunchy peanut biscuit recipe into a peanut butter chocolate chip cookie recipe.
Peanut butter cookies are just delicious, the added smoothness and tangy saltiness of the peanut butter makes it all that little bit moreish. Then you add chocolate chips to the mix for peanut butter chocolate chip cookies…. let’s just say there wasn’t much evidence that we spent the morning baking when my husband got home. Still, my littlest is obviously enjoying baking as much as his big brother does so it looks like Daddy will be having plenty of opportunities to be sampling our delights, we better keep up with all this running.

Chocolate Chip Peanut Butter Cookies – the video

Chocolate Chip Peanut Butter Cookies: My Little Chef
Instructions
Beat the butter and peanut butter together
Add the beaten egg, a little bit at a time and beat until thoroughly combined
Sieve the flour and baking powder into the peanut butter mix. Add the chocolate chip
Stir until a sticky dough forms
Chill dough in clingfilm for 30 mins. Preheat the oven to 190°
Drop a teaspoonful of mixture onto a lined baking tray
Bake for 15 minutes until golden brown
