Meal planning at its finest comes into play now. Healthy eating. Having a new baby in the house has let our eating habits slide, I’ve been excited to have all the forbidden, highly unhealthy, pregnancy foods like pate and brie. While the ease of takeaway has meant a couple more of these than necessary. Added to the celebratory meat filled barbecues. Well vegetables and vitamins were missing from our lifestyle.
So going forward we are on a “diet”. Not an actual diet for me as I am breast feeding and don’t want to do anything to upset my supply. Plus I have extra calories to play with (hello my good friend cake). More of a return to clean eating.
Out go white pasta, bread and rice to be replaced with wholegrain versions. No more potatoes instead we are going back to sweet potato. With more veggies added in, lots of soups for lunch, side salads, portions of veg.
I actually looked forward to getting into the kitchen to cook some of this and i know my body is appreciative of the extra vitamins I am replenishing it with! I have searched Pinterest far and wide – my recipe inspiration board is here – and if you have any favourite pinners you’d like to share with me please let me know.
Monday – Pan Grilled Salmon with Soy Sauce Glaze, Brown Rice and Side Salad
I kind of made this up as I went along, after grilling the salmon I added soy sauce and lemon to the pan to make a glaze which I then poured over the salmon and served immediately.
Tuesday – Cajun Spiced Chicken with Sweet Potato Wedges, Broccoli and Green Beans
Chicken rubbed with olive oil then rolled in seasoned flour mixed with a tablespoon on Cajun spice before shallow frying to crisp up.
Wednesday – Chicken Satay with Brown Rice and Salad
Those of you that follow me on Pinterest may have seen increased activity on my recipe board (generally around the 3am mark) as I am busy searching for new recipes to feed us all. This recipe is actually one i found a while back, last time we went with clean eating actually, and although it’s actually a pork recipe I substituted for chicken and it works wonderfully.
Thursday – Pork tenderloin stuffed with Apple with thin sliced Sweet Potato and Broccoli
And this week at least it’s goodbye to takeaway Thursday…. sob. Though we will be making a return next week I’m sure as I think a little cheat is good for you.
Again, another pinterest treat which can be found on my recipes board. I especially like this as it is a slow cooker treat.
Friday – Brown Pasta with Homemade Pesto and Prawns
Taking the pesto elements from the Meatball Pesto that was on Meal Plan #3 courtesy of DinnerTime ME and mixing it with brown pasta and some beautiful prawns.
Saturday – Chicken nuggets and chips
But the healthier version, homemade breaded chicken as the terror is on a nugget kick at the moment with a mix of oven baked sweet potato and white potato chips coated in paprika for a little bit of spice and as an alternative to salt.
Sunday – Chilli Marinated Tuna Steak with Salad
Tuna steak marinated with fresh chilli, soy sauce, honey and lemon juice served with spinach, avocado and red peppers.
