Cooking with Kids: Chocolate Cornflake Cakes

I love to cook with the Big One, and have been doing so since he was around 18 months old.  One of our very first recipes was making chocolate cornflake cakes, I mean who doesn’t love the crunchy yet gooey chocolate-y goodness that are chocolate cornflake cakes?!

We had some butter left over from when we made No-Bake Maltesers Cheesecake from the delectable Wyke Farms so I decided that maybe it was time to let the Baby get in on the baking action one rainy afternoon I bundled them both into the kitchen to make chocolate cornflake cakes.  Well.  The Big One made the chocolate cornflake cakes, the Baby banged the spoon around and then spent the rest of his time licking up any chocolate he could find.  Chocolate-y mess.

Still, they were made and they were delicious!

Instructions
  1. Line a cupcake tin with 12 paper cases
  2. Weigh out your cornflakes and put to one side
  3. In a heatproof bowl weigh out the butter, chocolate and golden syrup
  4. Gently melt chocolate mix over a pan of boiling water
  5. Add the chocolate to the cornflakes and mix well
  6. Spoon into cases
  7. Chill for an hour
