Clean Eating Peanut Butter Flapjacks: My Little Chef

I may or may not have mentioned yet that we are currently in the middle of marathon training. Obviously not my blooming self, it’s definitely been a while since I’ve even thought about running.  Some days I even ponder walking.  No, the fussy one, aka the husband, is busy getting ready to head to Barcelona to compete in this years marathon.

However marathon training is all consuming and a lot of it is about what you are putting in your body to help fuel and re-generate, so it kind of means the whole house is on a training plan, minus the running (thankfully!) so the request this week from the husband for our cooking project was to find something which would provide plenty of energy, replace carbs, and generally be a little bit tasty and good for you. Enter clean eating peanut butter flapjacks.

Now I love a bit of Pinterest and aim (and fail) to be pinterest perfect at all times and so I searched and searched for a recipe to try to make as clean a flapjack as possible.   The problem was that I couldn’t find many clean flapjack recipes however I did find plenty of granola recipes so I kind of went on a whim and adapted as I went along.  I mean, granola is just unbaked flapjack I guess?!

The recipe we tried I adapted from SkinnyMinnieMoves blog from a granola bar to a flapjack working with what we had in the cupboards at the time! Her original recipe can be found here if you’d rather granola.

Not only are these flapjacks filled with goodness for you, they’re also relatively easy to make, which of course means I had my little chef in the kitchen with me.

Instructions
  1. Preheat oven to 180 degree
  2. Chop banana, grate peach and add to a pan with the milk
  3. Warm on the hob, being careful not to boil. Whilst doing so mash the banana down
  4. Once combined add the peanut butter, honey, cinnamon and vanilla to the pan
  5. Stir on a low heat until combined
  6. In a separate bowl mix together the oats and raisins
  7. Pour the wet ingredients onto the dry and mix thoroughly
  8. Push mixture into a lined tin and bake for 30 minutes until springy
