Ingredients
- 2 eggs
- 225g desiccated coconut
- 150g caster sugar
- 100g chocolate

Instructions
- Preheat oven to 150 degrees and line a baking tray with greaseproof paper
- Beat together eggs and sugar until light and fluffy
- Stir in coconut
- Leave mixture to stand for 20 minutes
- Shape mixture into small balls, about the size of a teaspoon, place on trays and flatten slightly
- Bake in oven for 12-15 minutes until golden brown turning halfway through. Cool on cooling rack.
- Melt chocolate and dip cooled macaroons in
- Store in airtight container
