The meal plan #2

So following on from our first meal plan and given that Mum has now actually flown home after our blood pressure spiking scare here is what we have on the menu this week.

Monday; Cashew Beef with rice and cucumber salad

There is a company out here in Dubai, which according to the husband is a totally Dubai idea, called “Dinnertime Me” who basically provide the ingredients and the recipes to your door.  Fantastic.  Though I am yet to use them, so I borrowed the recipe when I was round at a friends…and the point of that ramble leads me to Monday’s meal; Cashew Beef with rice and cucumber salad.

Which, looks, like a garlicky, spicy, zesty stir fry and utterly delicious!

Tuesday; Cajun Chicken Salad with boiled potatoes

An easy and quick dinner.  You add Cajun spice to seasoned flour, drizzle olive oil over a chicken breast, roll chicken breast in flour and then shallow fry.
Tip – do not let the pan get too hot as then it burns on the outside and is raw on the inside – yes this is from experience

With fresh salad and my dressing which is made as follows:
1 crushed garlic clove
3 tbsp olive oil
1 tbsp balasmic
Mix and leave to marinate for an hour

Wednesday; Pasta Bake with Chorizo

I know that since the husband has finished his marathon training he did say he was never eating pasta again, however he also brought chorizo back from Spain, therefore this is my easiest go to meal, jar of homepride pasta bake sauce, chorizo, pasta, cheese.  Delicious!

Thursday; takeaway Thursday

Ahh the start of the weekend…….has to be done sometimes!

Friday; Butter Chicken and rice

A slow cooker favourite, I do love this one.  And it tastes like a good old British curry – I will be posting the recipe soon.  As it has onions in, it is a blended concoction to fool the husband…

Saturday; Honey and Soy Salmon with rice and salad

Salmon fillet marinated in 1 tbsp honey, 2 tbsp soy sauce, pinch of chili flakes and a good squeeze of lemon.  Baked in tinfoil in the oven for 20 minutes and served with steamed rice and salad.

Sunday; Meatballs

Delia’s finest recipe with extra to freeze!  The husbands favourite and a total treat as they have pork sausage meat in and so the price out here in Dubai is bumped up.
